Lemon Ginger and Honey Syrup

I pulverized about 170g peeled fresh ginger in the Thermomix. Then I added the juice from 1kg of lemons, roughly 1 litre of water, about 700g of honey and the yellow peelings of 3 lemon skins (created with a potato peeler). Brewed it in the Thermomix for 20 mins at 90 degrees, on about speed 2. Strained and bottled it and gifted it to the Grandpas of the family. Must make some more for me! I've been using the strained bits as a giant tea bag and it makes a delicious brew. The inspiration was New Zealand's Shott syrups, mine wasn't so thick, but it was yummy.
